Where It Comes From
Every winter, the plains of North India transform into an ocean of bright yellow mustard flowers. Our hives are stationed across mustard-growing regions of Rajasthan, Madhya Pradesh, and Uttar Pradesh from November through February. Mustard (Brassica juncea) is one of India's most important oilseed crops, and its flowers produce copious nectar during the cold winter months when few other plants bloom. The cold, dry climate concentrates the sugars in the nectar, producing a honey with a uniquely high glucose content that gives it its signature rapid crystallisation and creamy texture.

How We Process It
Mustard Honey crystallises so rapidly that extraction timing is critical. Our beekeepers harvest the combs within days of capping to extract the honey while it is still liquid. The centrifugal extraction is done at ambient winter temperature (15-20°C), and the honey is immediately jarred to allow natural crystallisation to occur inside the jar. We never heat mustard honey to re-liquify it — that would destroy the enzymes and alter the flavour. The result is a naturally creamed honey with a smooth, fine-grained texture. Each batch is tested for glucose-fructose ratio, moisture, and purity.

The easiest way to verify mustard honey is crystallisation speed. If your mustard honey is still liquid after a month at room temperature, it has likely been heat-treated or blended with high-fructose syrup.
