Where It Comes From
Our Acacia Honey comes from the arid and semi-arid landscapes of western Rajasthan and parts of Gujarat, where Babool (Acacia nilotica) trees grow abundantly along riverbeds, field boundaries, and village commons. These resilient trees bloom in early spring, producing clusters of bright yellow flowers that are intensely attractive to honeybees. Our hives are positioned within 2 km of dense acacia groves to ensure the bees forage predominantly on acacia nectar. The dry climate and intense sunlight of the Thar region produce a nectar with exceptionally high fructose content, which is why this honey stays liquid far longer than any other variety.

How We Process It
Acacia Honey requires particularly careful handling because its delicate flavour compounds are heat-sensitive. We extract it at hive temperature (around 35°C) using low-speed centrifugal extractors. The honey is coarse-strained but never pressure-filtered, preserving the fine acacia pollen that contributes to its subtle floral character. Moisture content is strictly maintained below 18% — lower than most honeys — which is one reason it resists crystallisation. Each batch undergoes pollen analysis to verify acacia dominance (minimum 45% acacia pollen) and NMR testing for authenticity.
How to Verify Purity
True acacia honey is nearly water-clear with a pale gold tint. If your 'acacia honey' is deep amber or brownish, it is likely blended with cheaper varieties. The most reliable indicator is crystallisation behaviour: genuine acacia honey should remain liquid for 12-18 months at room temperature. If it crystallises within weeks, the fructose-to-glucose ratio is off, suggesting adulteration.
